TEN OR LESS, ingredients that is!

Lentil Soup (Ann-style)
 So a co-worker yesterday was heating up lunch and it smelled delicious. You know I'm nosy, so I inquired about the dish. I made it last night and it was amazing. I did a few variations of his recipe, but I  felt like I had outdone myself. Thought I would share. The whole thing was under $10 and will feed me all week.

1-1.5 cups of green lentils
2 strips of bacon
1 large shallot
1 can of diced tomatoes
3-4 basil leaves
2 cups of chicken broth (you can also use veggie)
1 tablespoon of honey
Parmesan for a garnish
Salt and pepper to taste



1) Rinse lentils
2) Fill pot with water and add lentils. Bring to a rolling-boil for 10 minutes or till lentils are somewhat tender. (I hate that word)
3) Drain and put to the side
4) Dice up bacon and shallot
















5) In same pan --cook up bacon pieces. Once bacon is crispy add shallots to caramelize














6) Add can of diced tomatoes and 3-4 basil leaves. Stir together.

















7) Add 2 cups of chicken broth (or whatever broth you have on hand) and 1 tablespoon of honey.
8) Salt and pepper to taste. I also added some red-pepper flakes to spice it up a bit.
9) Let simmer for 30 minutes













10) EAT --or in my case eat grapes for dinner and take to for lunch the next day!
11) Oh yeah, add parm on top! 















So this is what I did last night instead of exercise, do laundry and organize my life. Feeling good about this decision. TAG you're it!
